Recently I had a birthday party, and I made this wondrous cake. It was so much fun to make and I can hardly describe the excitement I felt when I cut into it and saw all the crazy rainbow colors hidden on the inside! (Sometimes it’s the small things that really get me going). I had planned to keep the cake’s “specialness” a secret from my guests so there would be a big reveal when we cut into it, but I got too worked up and ended up telling everybody in advance. I blame my love of color and the wine I was drinking, but hopefully you will have more self-control. So take a deep breath, contain your excitement and have fun making the most colorful cake you have ever seen!

To Make The Rainbox Cake You Will Need:
- 1 Box of White Cake Mix
- Whatever ingredients it calls for (typically vegetable oil, eggs and water)
- Gel Food Coloring (it has to be gel food coloring, the normal kind won’t work)*
- First, make the white cake batter following the directions on the back of the box
- Next, separate out the batter into 5 bowls putting 1 cup of batter into each bowl.
- Use the gel food coloring to make each bowl of batter a bright, beautiful color**
- Once you have oiled your pan, pour each color into the center of the pan one at a time
- Bake the cake according to the directions on the cake box
- Viola! You have a rainbow cake
*It might be hard to find gel food coloring. You are most likely to see it at cake decorating specialty shops. There is a great one in Manhattan called NY Cake (56 West 22nd Street Between 5th & 6th Avenues). You can buy enough gel coloring for 2 cakes for about $3 per color. They also have a great assortment of cake decorations so it is definitely worth a visit.
**The last color I made was supposed to be purple but turned out to be kind of black instead. So be careful if you decide to mix colors and do it gradually…I got too excited again.
To Make Whipped Cream Cheese Icing (as posted on AllRecipes.com):
- 1 (8 oz.) package of Cream Cheese
- 1 cup white sugar
- 1 tsp. vanilla extract
- A pinch of salt
- 1 1/2 cups heavy whipping cream
- In a small bowl, beat the heavy whipping cream until stiff peaks form (see photo on the far left)
- Next, in a large bowl mix the cream cheese, vanilla, sugar and salt and beat until smooth.
- Fold in the whipping cream (see middle picture)
- And you’re done! Add some food coloring to the icing if you want even more color on your cake!
